Mango Margarita Overnight Oats

Ingredients:
13.5oz can unsweetened coconut milk
1 heaping cup frozen mango
Juice of 1/2 a lime
1 cup rolled oats
1 tsp vanilla extract
2 pinches stevia
1 pinch salt

Tools:
Blender
Large mason jar

Preparation:
Scoop 1 cup rolled oats into a large mason jar.

In a blender, combine coconut milk, frozen mango, lime juice, vanilla extract, stevia, and salt. Blend until mixture is smooth. Alternately, you can leave leave it a little chunky so there is visible mango left. That's totally up to you!

Pour the liquid mixture into the mason jar. Seal it and give it a good shake until well combined. Place in the fridge overnight. I like to give it at least 8-12 hours to do its thing!

Give it a good stir before serving.

You can keep the whimsy by serving it in a margarita glass with the little umbrella like pictured, or scoop into a bowl. If you're serving it whimsy style and don't want to give a child a glass, I found these plastic margarita glasses on Amazon, along with some umbrellas, and bamboo spoons! (Can you tell I'm all about a full experience when it comes to food?! Makes it fun for kids and adults alike.)
