Stuffed Zucchini Boats
Ingredients
1 zucchini
1 cup spinach
½ cup mushrooms, diced
½ cup ricotta cheese
1 clove garlic, minced
2 TBSP fresh basil, chopped
1 tsp red pepper flakes
2 TBSP EVOO
Salt & Pepper
Preparation
Preheat oven to 350.
Slice zucchini longways and scoop out some of the middle. Place them on a greased baking sheet.
In a frying pan, sauté the spinach, mushrooms, garlic, and red pepper in EVOO. Once spinach is cooked down, remove from heat.
In a mixing bowl, combine ricotta cheese with vegetable mixture, basil, salt & pepper to taste. Stuff the zucchini shells evenly.
Bake for 25 minutes.
