Vegan Tofu Yogurt
Ingredients
1/2 block medium soft tofu
1 TBSP cashew butter
3/4 cup frozen strawberries
1/2 frozen banana
Squeeze 1/4 wedge of lemon
Contents of 1 probiotic capsule (optional)
Toppings:
Granola
Blueberries
Preparation
In a high powered blender, combine ingredients and blend until smooth. Serve immediately.
Notes: The base of tofu and lemon are the only musts! Everything else is customizable. Add whatever frozen fruit you fancy - up to a cup. Choose your favorite nut butter and toppings.
If your blender is having trouble, add 1-2 TBSP nut milk or water to help it blend!
