Fanciful Farfalle Pasta Salad
Reinventing summer pasta salad... bowties, bright vegetables, and a simple fresh dressing. Our food should always be colorful and full of fresh flavors and textures, especially during the summer. Take advantage of spring and summer vegetable gardens. There are so many ways to make the basics more fancy!
Ingredients
2 cups farfalle
1 cup radicchio, chopped
¼ cup sun dried tomatoes
¼ cup pistachios
1 garlic clove, minced
2 TBSP chopped basil
2 TBSP EVOO
2 TBSP lemon juice
sprinkle of parmesan cheese
Preparation
In a medium pot, bring 8 cups of water to a boil. Salt the water and add the farfalle. Cook for about 12 minutes. Once al dente, remove from pot and run under cool water to stop the cooking process. In a small bowl, whisk together the EVOO, garlic, lemon juice, and parmesan cheese. Place pasta in a bowl with radicchio, sun dried tomatoes, pistachio, and basil. Drizzle with dressing. Stir until combined.
