Tropical Shrimp Ceviche
*Ceviche is typically made with raw fish or shrimp (and is cured by the lime juice), but if you’re not comfortable using raw fish, you can use cooked.
Ingredients
1 pound shrimp, diced
1 red bell pepper, diced
1/4 red onion, diced
1 jalapeno, diced
1 small avocado, chopped
2-3 TBSP cilantro, chopped
1/2 cup coconut milk
1/4 cup lime juice
pinch of salt
Preparation
Once all ingredients have been diced and chopped, add to a large bowl. Cover with coconut milk, lime juice, and salt. Stir until well combined. Serve with tortilla chips.
