Shrimp Spring Rolls
Admittedly, using rice paper takes some practice, but once you have the hang of it, spring rolls are a fast and healthy meal! Fill them with your favorite vegetables, protein and pair with your favorite dipping sauces.
Ingredients
Rice Paper
1-2 Lettuce Leaf
2 shrimp - halved
Sliced Cucumber
Sliced Mango
Sliced Avocado
Preparation: Dip your rice paper in warm water, once it starts to soften, take it out and lay it flat on a plate. Place lettuce into the wrap and layer the rest of the ingredients on top. Carefully wrap the rice paper around the vegetables.
Enjoy with your favorite dipping sauce!
